Include | - Chicken & Rib Combo—1 pound chicken or
half chicken; you get half a rack of ribs, 2 side dishes and a
choice of bread, regular or jalapeno, either hush puppies, corn
bread or Texas toast

- Alligator—Served either sautéed with red
onion, garlic, parsley, butter and Cajun seasoning, 2 sides and
choice of bread, when time permits we do a country fried alligator
prepared just like a country fried steak

vegetables, chicken and sausage served with cornbread
- Gumbo—A blend of seasoning and rue a butter
and flour mixture, salt and pepper, slowly cooked, the darker the
rue the darker the gumbo, sausage and chicken, your choice of
bread, usually hush puppies
- Beef Brisket—Slow cooked smoked 14 hours at a
secret temperature with a 4-blend dry rub, cooked to perfection.
- Raj'n Caj'n Feast—$55.95 Feeds 4 to 6
depending on how hungry you are, the mambo of sampler platters with
chicken, ribs, pulled pork or shredded beef, corn on the cob, bread
for everyone, major salad, 2 large sides, large basket of corn
bread, Texas toast or hush puppies, side dishes are quart sized.
Served on an 18-inch oval platter that weighs about 15 pounds after
we are finished.
